<p><strong>Browned Butter Sage Crostini  </strong></p><p>French baguette, sliced and toasted<br />Prosciutto<br />Buffalo mozzarella, sliced thin<br />Fresh sage leaves<br />Salted Butter</p><p><strong>Directions:</strong><br />1. Butter slices of French baguette and toast under the broiler until golden. Set aside.<br />2. Preheat oven to 375 degrees.<br />3. In a small skillet melt butter over medium low heat. Add fresh sage leaves and cook until sage is crispy and butter begins to brown in bits on the bottom of the pan. (you may need to remove sage before butter is browned).<br />4. Top toasted bread with prosciutto and cheese. Bake at 375 until cheese begins to melt.<br />5. Remove from oven and spoon browned butter over crostini. <p><strong>Turkey Squash Moussaka  </strong></p><p><strong>Ingredients:</strong></p><p>½ kg ground turkey<br />2 eggplants, large size<br />1 onion, chopped<br />2 cups tomato sauce<br />2 cups pre-cooked mashed butternut squash<br />1 tablespoon brown sugar<br />2 tablespoons oregano<br />Olive oil<br />Salt and pepper</p><p><strong>Method:</strong></p><p>The eggplants are thinly sliced, lengthwise. They are salted on both sides and set aside for about 15 minutes, in a strainer. The butternut squash is mixed with the tomato sauce and seasoned with the spices. The eggplant slices are dried with a paper towel and placed in a greased pan. They are sprinkled with olive oil and baked in the oven for about 10 minutes, on each side. In a large frying pan, the olive oil is heated and the chopped onion is dropped to fry until golden. The ground turkey is added and flavored with the oregano, salt and pepper. They are cooked together for 15 minutes, stirring from time to time. Into a greased baking pan, some of the tomato and squash mixture is evenly spread on the bottom and covered with a layer of eggplant slices. The turkey meat is added on top of the eggplants and the process is repeated with the rest of the ingredients, finishing with the tomato- squash mix. The moussaka is baked in the oven for 40 minutes. Is served warm!</p>
